Herby EVOO Cubes
This is less of a recipe and more of a suggestion. I have a lush herb garden in spring and summer, but it starts to fail around April so this is the perfect solution to fresh herbs when you need them throughout the year.
I have done mixed herb cubes, but you can get all retentive on me and go with different herbs, which could be handy in a crisis! Just mark them very clearly. Of course I used Cobram Estate EVOO for it's flavour and health properties.

Need
- 1 Thermomix bowl full fresh herbs of choice
- 375 Milliliters Extra Virgin Olive Oil (EVOO) (this is a medium sized bottle widely available) BUY

Place herbs into the Thermomix bowl and chop 4 sec/speed 6-7.

Add EVOO and stir 10 sec/speed 1.

Divide between mini tartlet pans or ice cube tray. Freeze overnight. Un-mould and place into a ziploc bag or Stasher bag and keep in the freezer until use.
