A golden, gooey toastie where melted cheese meets spicy leek-chi, comfort food with serious gut-loving credentials.
This Kimcheeze Toastie is proof that fermented foods don’t have to be fussy to be powerful. It’s crispy on the outside, gloriously melty in the middle, and packed with that unmistakable kimchi tang that cuts through the richness of the cheese in all the right ways.
Part of the Gut Instinct approach, this is a “ferment to finish” favourite, the kind of recipe you make when you want something fast, deeply satisfying, and still supportive of your gut. Perfect for lunch, late-night cravings, or when the fridge feels empty but there’s a jar of leek-chi (or kimchi) calling your name.

Need
- 2 Slices Lazy Sourdough loaf thick Recipe
- butter to taste BUY
- Leek-chi as needed Recipe
- mature cheddar cheese to taste
Do

Preheat a cast iron pan on a medium heat.

Slice and butter one side of each slice generously.

Turn butterside out and spread one slice of the bread with Leek-Chi.

Top with loads of sliced cheese of choice.

Press down with the other slice, butter side up and transfer to the hot pan. Add more butter if required. Turn heat down if necessary.

Cook for at least 7 minutes on one side. Flip and cook the other side for around 4 minutes. You can add a weight in the form of another cast iron pan on top for a better result.

Alternatively use a sandwich press, but I personally love a toastie to be well, toastie!
