Creamy roasted pumpkin hummus blended with garlic and lemon for a smooth, nutty dip that’s perfect for platters, snacks and easy entertaining.

This beautiful bright hummus looks amazing. Naturally it is also very tasty! Serve it with inky black olives, fresh green herbs, some great crispbread and perhaps cracked walnuts all on the same plate. Stunning on its own or the perfect addition to your grazing table.

Serving Suggestions:
Serve with warm flatbread or pita wedges
Spread on toasted sourdough with avocado
Add to a grazing platter with olives and cheeses
Use as a dip for carrot, cucumber and celery sticks
Spoon into wraps or sandwiches with grilled vegetables
Serve alongside grilled lamb or chicken
Top with toasted pine nuts and a drizzle of EVOO for entertaining
Spread onto crackers with crumbled feta
Use as a base for roasted vegetable bowls
Serve with roasted cauliflower or broccoli for dipping

Preheat oven to 200°C/395°F and line an oven tray with baking paper. Cut the pumpkin into several pieces. There is no need to peel or deseed it at this stage. Drizzle with EVOO and sprinkle with pink salt flakes. Roast for 30-40 minutes until well cooked and slightly charred. Cool, peel and deseed. Set aside.

Place more salt, pepper, cumin, coriander and garlic into a dry frypan and roast until just fragrant.

Cool spice mix slightly before placing into the dry Thermomix bowl. Mill 10 sec/speed 10.

Add all remaining ingredients including the roasted pumpkin, and blend 30 sec/speed 5–6.

Scrape down sides of bowl and lid, and repeat until silky smooth.

Serve drizzled with additional olive oil and toasted pepitas.
