Unicorn Sushi, A Magical, Rainbow Sushi Recipe Kids Can Make Themselves

Unicorn Sushi is where rainbow colours meet kitchen confidence. This fun, kid-friendly sushi recipe swaps traditional white rice for bright, playful coloured rice that little hands can roll, slice and proudly serve. 1  

Place simmering basket on top of Thermomix. Weigh in 400g of sushi rice. Rinse well.

Place 1 litre of water into Thermomix bowl and insert basket. Cook 20 min/Varoma/speed 1.

Tip rice into 4 smaller bowls. Add a splash of sushi vinegar to each bowl and colour each a different colour of choice with food colouring. Stir well to combine.

Lay out a nori sheet on a sushi board. Arrange the rice in stripes using all colours, making sure the first and last colour on the nori sheet are not the same colour. Top the rice with avocado, vegetable slices and salmon if using.

Roll up tightly and slice.

Serve with all the usual accompaniments.
