Magic Mushroom Quiches
When I say magic mushroom quiches, I don't mean, 'magic mushroom' quiches if you know what I mean? Ummm...never mind. The magic bit refers to no actual pastry and yet you get a little bit of a base happening once they are cooked.
This is another delish AIrFryer recipe for those of you who have joined the craze. We are full swing on the old airfryer thing. They are pretty good, easy, quick and perfect for so many things. Need
- 200 Grams mature cheddar cheese cubed
- 1 brown onion halved
- 1 Leek roughly chopped
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 150 Grams Danish feta, cubed
- 200 Grams Swiss Brown Mushroom(s) quartered
- 500 Grams milk
- 3 eggs
- 2 Pinches pink salt flakes BUY
- 3 Tablespoons cornflour or cornstarch
- fresh thyme for garnish

Preheat Air Fryer to 160°C.
- 2
Place 100g cheddar cheese into the Thermomix bowl and mill 10 sec/speed 10. Set aside. Cube the remaining cheese and set aside.

Without washing the Thermomix bowl, add onion, leek and EVOO and chop 4 sec/speed 5. Cook 5 min/Varoma/speed 1/MC off

Divide between the dishes you will cook the quiche(s) in. Make sure they will fit inside your Air Fryer.

Place the mushrooms, feta and cubed cheddar on top of the onion mix.

Place milk, eggs, salt and cornflour into the Thermomix bowl and combine 20 sec/speed 6.

Pour mixture over the onion, leek and cheese filling. Sprinkle with the grated cheese.

Place into the Air Fryer and cover with foil. Cook for 18-25 minutes, depending on the size of your dishes. Cook until just set in the centre.

Garnish with fresh thyme and serve with a garden salad.
