Marshmallow Ravioli
Homemade chocolate pasta parcelled with fluffy marshmallow, drenched in hot fudge and served with vanilla ice cream.
Dessert pasta is officially a thing, and it’s here to blow minds. These pillowy marshmallow–filled ravioli are made from scratch using a rich, cocoa–loaded chocolate pasta dough, rolled silky thin (patterned version optional, but so fun to make) and cooked just until they float. Then comes the real drama: a glossy Thermomix hot fudge sauce poured generously over the top, finished with a scoop (or two) of vanilla ice cream that melts into every chocolatey fold.
It’s playful, unexpected, and ridiculously delicious, a total showstopper for dinner parties, Christmas, Valentine’s Day, or those “let’s make something crazy cool” cook–with-the-kids moments. So grab the pasta roller, ramp up the chocolate, and get ready to turn dessert into pasta night.

The Chocolate Pasta
- 175 Grams bakers or strong flour BUY
- 25 Grams cocoa powder BUY
- 1/2 tonka bean grated with a microplane BUY
- 2 Tablespoons raw caster sugar BUY
- 1 Pinch pink salt flakes BUY
- 40 Grams whole milk BUY
- 2 eggs

The yellow pasta
- 300 Grams bakers or strong flour BUY
- 1 Pinch pink salt flakes BUY
- 2 Teaspoons raw caster sugar BUY
- 3 eggs

The Rest
- commercial marshmallows as needed
- 1 Batch Hot Chocolate Fudge Sauce Recipe

Make the chocolate pasta first. Place all the dry ingredients into the Thermomix bowl and mix 6 sec/speed 10.

Add the wet ingredients and blend 6 sec/speed 6. Knead 1 min/interval/dough setting.

Roll into a tight ball and leave to rest in a well floured bread mat.

Yellow pasta Place all ingredients into Thermomix bowl and mix 10 sec/speed 6.

Knead 2 min/Interval/dough setting. Tip out onto floured Silpat mat, knead into a tight ball and wrap. Allow to rest 10 minutes, longer if you have the time.

Divide pasta into 4 pieces and roll out each piece using a pasta roller if available, laminating several times until you are happy with the thickness. (We all know thin is in!!) You probably won't need all of this yellow pasta for this dish. Dry the unused and rolled pasta in an airtight bag in the fridge and use for another dish within a week or two.

To make the patterned pasta you need to watch the video, but essentially, roll out large sheets of the yellow pasta to as thin as you can go without it losing a good texture.

Roll out the chocolate pasta to the same thick/thin-ness and then slice it up to tagliatelle or cut shapes out of it. Place these on top of the yellow pasta sheets and use a rolling pin to help them adhere. Run the sheets through the pasta roller again.

Lay them on a floured silpat mat, do not go too hard of the flour, as this will hinder the sticking power of the ravioli. I used a pastry brush to remove as much of the flour as I could.

Gauge a decent distance between each ravioli and place marshmallows along the pasta. Top with another sheet and cut out the ravioli with a round cutter or use a ravioli maker. Make sure the edges of each piece are well sealed or you will lose the marshmallow when you boil it.

Bring a pot of water to the boil and cook the ravioli until they float plus 2 minutes.

Serve immediately with hot fudge sauce and ice cream!
