A silky, gut-friendly panna cotta with the tang of kefir and the brightness of fresh passionfruit.
This kefir panna cotta is what happens when classic dessert meets good gut sense. Lightly set, luxuriously creamy and gently tangy from cultured kefir, it’s finished with sharp, juicy passionfruit to cut through the richness. It feels indulgent, looks dinner-party worthy, and just quietly happens to be probiotic too, with all the benefits! Exactly the kind of dessert that belongs in the Gut Instinct Protocol kitchen. Perfect for warm weather, make-ahead entertaining, or when you want something sweet without going overboard.
Note; This recipe can easily be doubled. No need to change timings.

Need
- 2 Teaspoons flavourless gelatin
- 2 Tablespoons water
- 115 Grams cream BUY
- 60 Grams honey
- 1 Teaspoon vanilla bean paste BUY
- 1 Pinch pink salt flakes BUY
- 220 Grams Milk Kefir Recipe
- Extra Virgin Olive Oil (EVOO) to brush moulds BUY

Combine gelatin and water in a small bowl and set aside.

Place cream, honey, vanilla and salt into the Thermomix bowl and warm 8 min/80°C/speed 1.

Add the gelatin mixture and combine 1 min/80°C/speed 1.

Scrape down the sides of the bowl, as this is a small amount, you need to make sure all of the gelatin has been incorporated.

Add the kefir and blend 10 sec/speed 4. To prevent layering, you will need to heat the mixture, but we don't want to destroy the probiotics, so only bring the temperature up to 50°C/speed 3. Keep an eye on the temperature registering on the Thermomix.

Brush 4-5 small moulds with EVOO and then divide the panna cotta mixture between them.

Place into the fridge until set.

Unmould and serve with anything you like! We used fresh passionfruit.

If you don't want to risk the unmoulding, by all means use small dessert glasses.
