Oatmeal Cinnamon Raisin Cookies
Warm & Cosy and pretty American: Easy Thermomix Oatmeal Cinnamon Raisin Cookies!
Cookies I think were invented by Americans. Well, Dutch settlers in America to be accurate and today Americans consume over 300 cookies a year per person! There are so many variations of cookie out there, but this is an all time classic. The cinnamony goodness with the sweet chewiness of a raisin is hard to pass up. Add chocolate chips and/or nuts and really, you may end up with a new addiction.

Need
- 240 Grams butter cubed BUY
- 160 Grams raw caster sugar BUY
- 160 Grams dark brown sugar
- 2 eggs
- 2 Teaspoons vanilla bean paste BUY
- 3 Teaspoons ground cinnamon
- 1 Teaspoon baking powder
- 1 Teaspoon bicarb soda
- 1 Teaspoon pink salt flakes BUY
- 320 Grams bakers or strong flour
- 300 Grams rolled oats
- 200 Grams raisins
- 200 Grams chocolate chips BUY
- OR 200 Grams pecans

Preheat oven to 180°C and line 3 large baking trays with paper. Set aside.

Place butter, sugars, eggs, vanilla, cinnamon, baking soda and powder into the Thermomix bowl and blend 30 sec/speed 8. Scrape down lid and sides of bowl and blend 30 sec/speed 6.

Add flour and blend 20 sec/speed 6.

Add rolled oats and raisins, chocolate chips, or pecans and incorporate 20 sec/dough setting or Interval.

Spoon onto prepared trays, about the size of 2 tablespoons and about 10cm apart.

Bake 13-15 minutes until golden but still moist in the centre.

Cool slightly on trays before removing onto a cooling rack.

Store in an airtight container in the pantry.
