This recipe has been doing the rounds in one way or another with me for years. I love adding flavour with butter. It just makes a quick weeknight meal that has heaps of flavour soooo easy to produce at a moment’s notice. So get any butter flavour happening that you like, steam your fish, chicken, prawns and you are good to go! Chermoula, Mustard, on!!
This recipe now appears in Cooking with Tenina; More great recipes for the Thermomix. (Which just quietly is nearly sold out across the nation, but I still have copies available in my store.)

- 4 150g fish fillets of choice
- Dash white wine
- Sea salt and freshly cracked black pepper to taste
- 300 Grams rice
- 1.2 Litre water
- 1 Batch Chermoula Butter Recipe
Cut four large square pieces of baking paper and place a piece of fish in the centre of each.
Drizzle fish with a little white wine and season. Wrap loosely, ensuring that the parcels are well sealed. Place into Varoma dish and set aside.
Weigh rice into TM basket, rinse well, then insert basket into Thermomix bowl. Add water and set Varoma into position. Steam 20 min/Varoma/speed 4.
Serve fish alongside rice with a slice of Chermoula Butter on top.
If desired, steam a few green beans (or other veggies of choice) in Varoma tray at the same time as the fish.
