Summer Rolls
We nailed it, happy to report. The Summer Roll candy bar from childhood will bring back all the feels...time to get mixing!
One of my favourite childhood treats were summer rolls. I was pretty surprised to learn from Bree when we were making these that summer rolls are commonly known as what I call fresh rice paper rolls, the Vietnamese version of a non fried spring roll. I had never heard them called that before and only associate summer roll with this delicious (semi good for you) chewy honey, chocolatey, coconutty treat.
The 'Europe Summer Roll' is a chocolate bar manufactured in Australia, primarily consisting of nougat, peanuts, and coconut covered in milk chocolate, and is considered a local Australian product, meaning its origin lies within the country itself; although the 'Europe' brand name might suggest otherwise, it is not linked to a European origin. They also make those crunchy, chewy sesame bars, which may be next on our hit list...stay tuned.
We love pretending we are on Snackmasters, though we thought of it first! (We created famous Aussie snack, twisties, if you recall...they were not something I ever want to make again, just saying!) We have created Tim Tams, which recipe is still pending as we were going to film it, but it got away from us time wise! (They take a while!)
Then how about Fruit Leather Roll Ups, Corn Chips, Baked Crisps with Infused Oil, Bounty Bars, or even a Fermented Cola !!
I feel as though this recipe is pretty good, maybe not as chewy, but fantastic straight from the fridge. It is basically based on my friend Leonie's from her ThermoFun excellent recipe which is about the only Thermomix version that everyone talks about! Her recipe is a slice with a chocolate topping, which does sound amazing, I mean...more chocolate is always a good thing. Go Lee.
I have wrapped them and frozen them for ongoing snackery...they will last longer that way, I keep telling myself. But I doubt it. They are very good.

Need
- 300 Grams chocolate milk chocolate is recommended for this BUY
- 180 Grams honey
- 200 Grams Peanut Butter Recipe
- 190 Grams rolled oats
- 60 Grams shredded coconut lightly toasted. Plus extra for coating.
- 80 Grams pecans roasted and chopped
- 2 Grams vanilla bean paste BUY
- Pinches pink salt flakes BUY
- 20 Grams coconut oil

Line a slice tin with a silpat mat.

Place chocolate into the Thermomix bowl. Chop 10 sec/speed 9. Melt 4 min/50°C/speed 1.

Add honey and peanut butter. Melt 2 min/90°C/speed 1.

Add remaining ingredients and combine 30 sec/Reverse/speed 4.

Push mixture into the tin. Refrigerate for 1 hour or longer.

Once the mixture is easy to handle, slice into Summer Roll shaped logs and roll in coconut.
