Tuna Mornay Croquettes
These are a little bit addictive. Once you have had one, and another, there is no stopping. Especially if you are dipping in aioli!
Crispy, creamy, flavour-packed croquettes with a zesty essential oil twist, you have been warned.
Croquettes just got a glow-up! These Tuna Mornay Croquettes are crispy on the outside, creamy and comforting on the inside, and feature doTERRA essential oils. A drop of Lemon essential oil lifts the richness of the mornay sauce, while a touch of Black Pepper oil adds subtle heat without the grind. Perfect for lunchboxes, snacks, or as finger food for your next get-together, this recipe is a brilliant way to use pantry staples in a fresh and flavour-forward way.
Make them ahead, freeze them, bake or fry, though why wouldn't you bake, too easy! However you roll, they’re a hit.

- 150 Grams mature cheddar cheese cubed
- 1 spring onion, roughly chopped
- 1 lemons zest, finely grated
- 1 Handful flat leaf parsley
- 2 eggs lightly whisked
- 100 Grams bakers or strong flour BUY
- 125 Grams flaked tuna in oil, well drained
- 250 Grams mashed potato, cold
- 4 doTERRA lemon oil BUY
- 1 Drop doTERRA black pepper oil BUY
- 2 Drops doTERRA Italian Cuisine Blend oil
- 100 Grams panko bread crumbs (plus more for rolling)
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY

Preheat oven to 200°C. Line a tray with baking paper.

Place cheese, spring onion, zest and parsley into the Thermomix bowl. Chop 3 sec/speed 8.

Add egg, flour, tuna, mashed potato and doTERRA oils and combine 6 sec/speed 5.

Add panko and combine with spatula.

Roll into balls and then roll in panko bread crumbs.

Place on tray and drizzle with EVOO. Bake for 20-25 minutes until golden.

Serve with aioli...and just try stopping at one.
