Wasabi & Lime Mayonnaise
Apparently there was a store in NYC that opened pre-covid selling only mayonnaise in all the flavours you could imagine. While I think that is a little too exclusive, I understand the passion about mayonnaise. The things you can add to mayo to take it above and beyond this world are wide and varied, so get ready for the new taste sensations that are specified here. Your mission, if you choose to accept it, is to never more fail at mayonnaise, and to forever more add flavour above and beyond the call of duty.
Delicious on steamed fish, as the dressing in sushi, on a rice and tuna salad. Divine in a tuna dip. But the by far the best dipper for anything fried like chips or tempura veggies! Delish!

Need
- a few capers (optional)
- 2 egg yolks
- 15 Grams apple cider vinegar
- 10-15 Grams wasabi paste (more or less to taste)
- Pinches pink salt flakes BUY
- 400 Grams grapeseed oil
- Juice 2 limes

Place capers if using, egg yolks, vinegar, wasabi paste and salt into Thermomix bowl and mix 1 min/37°C/speed 5.

Gradually add oil through hole in lid with MC in place, 3 min/speed 5.

Add lime juice and blend 10 sec/speed 5. Scrape into sterilised jar and keep in fridge up to 3 weeks.
