ABC Nut Butter Truffles
Who doesn’t love a rich dense truffle? These are dairy free if you use a dark enough chocolate (over 70% should be dairy free) and are just as creamy and decadent as you would expect a truffle to be. They are refined sugar free though we do use a little pure maple syrup. We don’t think you will miss the sugar at all.

Need
- 100 Grams chocolate dark, over 70% BUY
- 2 Tablespoons coconut oil
- 200 Grams ABC Nut Butter pre-made (or use any commercial nut butter of choice) Recipe
- 1 Teaspoon vanilla bean paste BUY
- 1 Tablespoon pure maple syrup or rice bran syrup
- 4 Tablespoons cocoa powder dark BUY
- Additional cocoa powder, freeze dried raspberries and edible flowers to decorate

Line a small baking tray with paper. (15cm x 15cm will give you a nice deep truffle.)

Place the chocolate and coconut oil into the Thermomix bowl and melt 6 min/50°C/speed 1. Scrape down sides of bowl if needed. All the chocolate needs to be glossy and well melted. If you are using something other than couverture, you may need to add time.

Stir to combine, when smooth, add in the nut butter and vanilla bean paste. Add syrup and cocoa powder and blend 10 sec/speed 8. You should have a nice glossy ganache. Pour into the prepared tin and place into the freezer.

When ready to serve, remove from the tray and cut into pieces. Allow them to ‘warm up’ to room temperature before decorating to taste.

Store in the fridge or freezer if not eating immediately as they will be very soft at room temperature. Serve directly from the fridge or freezer.
