ABC Nut Butter with Cacao Nibs

As if you needed an excuse, but there are loads of reasons to make and eat this delicious ABC (Almonds, Brazil nuts, Cashews) nut butter, loaded with crunchy Cocoa Nibs. Cocoa nibs may offer anti-inflammatory effects, boost your immune system, and protect against diabetes, heart disease, and certain cancers. So although we call it yummy, you can call it healthy!

You can replace any of the nuts with any nuts or seeds of your choice. Bear in mind that blending time may vary based on the freshness of the nuts. Some nuts are oiler than others and will come together faster when this is the case. If you don’t want to use EVOO, you can use an equal amount of flavourless coconut oil.

Place the nuts onto an oven tray and into a cold oven set to 200°C for exactly 10 minutes. Cool slightly but be ready to blend.

Place still warm nuts, salt, vanilla and maple syrup into the Thermomix bowl and blend 2 min/speed 7 or until you can hear or see that the oils are being released from the nuts and creating a buttery consistency. If this doesn't occur, you will need to keep blending until it does.

Add EVOO if using to make the consistency more spreadable. Blend to just combine on a low speed.

Taste the nut butter and add salt or maple syrup to adjust flavour to your liking.

Add the cocoa nibs and stir through with a spatula.

Store in an airtight jar with a screw top lid in the pantry. There is no need to refrigerate.

Serve on toast, waffles, pancakes, ice cream, or use some to make our fabulous Nut Butter Truffles!
