Whenever there is a desire for egg noodles, then there should also be a desire for this sauce as well. Simple in the extreme, super quick and really so delicious. Also very cheap given that you serve 4-6 people with just 400g of steak. Add broccoli and even noodles to bulk it up if you feel you need to, but we didn't find that at all.

The Beef
- 2 Tablespoons water
- 2 Tablespoons soy sauce
- 1 Tablespoon cornflour or cornstarch
- 400 Grams beef fillet steak, thinly sliced

Garlic Hoisin Sauce
- 20 Grams fresh ginger
- 5 cloves garlic
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 20 Grams raw caster sugar BUY
- 300 Grams hoisin sauce
- 200 Grams water

The Rest
- 40 Grams Extra Virgin Olive Oil (EVOO) BUY
- 1 head of broccoli, in florets
- 1 Batch Egg Noodles OR packet egg noodles. Cooked as per packet instructions. Recipe
- 1 Tablespoon sesame seeds to garnish

"Velvet" the beef by mixing the water, soy and cornflour in a bowl then add the beef strips and stir to coat. Cover and rest for 20 minutes.

To make the Garlic Hoisin Sauce, place the ginger, garlic and EVOO into the Thermomix bowl and chop 5 sec/speed 6. Sauté 5 min/Varoma/speed 1.

Add sugar, hoisin and water. Cook 20 min/Varoma/speed 2. Set aside.

In a clean Thermomix bowl, add 20 grams of EVOO and heat 4 min/Varoma/speed 2.

Add beef and cook 7 min/Varoma/speed soft. Check half way and stir with spatula. Set aside.

Place 20g EVOO into the Thermomix bowl and heat 4 min/Varoma/speed 2.

Add broccoli and cook 10 min/Varoma/speed soft. Or until tender.

In a large serving bowl, combine the beef, broccoli and sauce. Garnish with sesame seeds.

Serve over egg noodles.
