Black Beauty Smoothie
Technically not black, more aubergine...but a delicious healthy smoothie to start any day!
I have just bid farewell to my last house guests of the Christmas season, and as much as I will miss them all, it feels like it is time to get back on track with my normal eating habits. I have been waking up to hotel style breakfasts for a month at least and this just has to stop! No more eggs, bacon, avocado on toast. No more waffles with all the deadly trimmings, no more breakfasts out and about where I eat outrageous things and all before I have had the time to develop an appetite.
I am not a breakfast person at the best of times, (Even though my very popular 'What's for Breakfast?' ebook might lead you to believe otherwise.) Don't get me wrong, I can down a hotel breakfast along with the best of you, and probably outwit, outplay and outlast you all...but on a day to day basis, I love a good Crio Bru first thing and then it will be nearly lunchtime before I get around to actually eating something.
But I digress...kissed those guests goodbye, along with the decadent breakfasts of late. Needed a quick healthy shot in the arm (mouth) to start my day, spinach in the fridge, cranberry and macqui berry powders in the cupboard...and voila. (Don't we all need a quick healthy start to the day like this?) Enjoy.

Need
- 1-2 bananas, frozen
- 3 Tablespoons cranberry powder (available in health food stores)
- 2 Tablespoons macqui berry powder (Power Super Foods)
- Enough baby spinach as directed
- 200 Milliliters water
- 70-100 Grams coconut milk Recipe
- 3 Teaspoons pure maple syrup
- Few coconut shreds to garnish
Do

Place bananas and powders into Thermomix bowl and mill 10 sec/speed 10. Scrape down sides of bowl.

Fill the bowl loosely to the top with baby spinach, without compressing it at all.

Add remaining ingredients through hole in lid as you blend 20-30 sec/speed 8.

Stop and scrape down sides and lid as needed and repeat until you are happy with consistency, adding water or coconut milk to taste.

Serve in your mason jar of choice (you know this makes it taste healthier right?) sprinkled with a little shredded or flaked coconut.
