Isn't this just gorgeous? We think so. I wanted something impressive and pretty for our Vietnomnom cooking class to welcome our guests. Although this is not strictly Vietnamese, we did go to a very cool bar in Hoi Anh and this is something they totally could have served...they just needed me to tell them about it. The flavours are very fragrant and I did notice that the lychee drink became very perfumed and amazing over a couple of days. SO it is definitely something you need to put on your menu!

The ice cubes need to be made separately and you can make all of them or just go with one, but I did love the colour of the three. The passionfruit ice cubes will always be my favourite as I just love the Spiced Passionfruit Syrup which we use as often as possible and in as many things as possible. So here it is again! (You can thank me once you make it!)

I did serve this to a friend all made up and so she didn't really benefit from the colour of the ice cubes as they kind of disappear once you add the lychee juice, so to be more impressive, consider purchasing little jars to serve the drink NEXT to the glass of ice, carefully arranged of course. Place strawberries, lychee juice and lime juice into the Thermomix bowl. Blend 20 sec/speed 8.

Refrigerate until needed. Strain when ready to use.

To serve, pour equal quantities of Sungria and sparkling water or rosé into a glass with several of the Tropical Fruity Ice Cubes to taste.
