Almond Butter Berry Smoothies
No brunch is complete with the obligatory salute to the smoothie couture culture that is part of our lives these days. I have an entire smoothie recipe book, in fact TWO smoothie books, and there are so many options, it is staggering. This one is very instagrammable in the right light, but who cares about that? It is easy to make in advance and tastes amazing. You could sub in coconut yoghurt or cream for the pot set yoghurt if you wanted to go dairy free. It would look perfect on your brunch buffet table in little shot glasses! Add flowers at will, they are so cute.

Need
- 60 Grams almonds
- 150 Grams mixed berries of choice, fresh or frozen
- 150 Grams raspberries, frozen
- 1 small banana, frozen in pieces
- 200 Grams pot set yoghurt (or use coconut yoghurt or coconut milk for a dairy free version) Recipe
- 100 Grams pomegranate juice
- 1 Handful baby spinach leaves
- 1 Teaspoon vanilla bean paste BUY
- fresh mint leaves to garnish
- berries and edible flowers to garnish
Do
- 1
Place almonds into the Thermomix bowl and blend 1 min/speed 7.
- 2
Place all remaining ingredients but garnishes into the Thermomix and blend 2 min/speed 8. Add ice if you wish to make the consistency thicker.

Garnish with fresh berries, mint leaves and berries, flowers of choice.
