This delicious refreshing sweet tea is sold in plastic bags with straws on every street corner in Bangkok. This is my version ... but feel free to add any spices of your choice.
Of course I couldn't just leave it there. I had to have options to use the tea concentrate other than as well, iced tea...I am still thinking a Thai Tea Ice Cream would be amazing. Any takers?

Need
- 10 star anise
- 1 Vanilla Bean BUY
- 60 Grams raw caster sugar BUY
- 60 Grams loose Thai tea or tea of choice
- 1 Litre water for brewing plus more for dilution
- 200 Grams cream
- 200 Grams condensed milk or to taste
- Ice to serve

Place star anise, vanilla bean, sugar, tea and water into Thermomix bowl and brew 10 min/100°C/speed 1.

Allow to infuse for as long as you can but for at least 15 minutes.

Strain out solids and return to Thermomix bowl. Dilute with cold water to taste, up to 1L.

Add cream and milk and blend 10 sec/speed 8. Chill for several hours. Serve over plenty of ice. Plastic bag optional!
