Chicken Bruschetta

Need
- 4 chicken breast fillets
- pink salt flakes and pepper to taste BUY
- Extra Virgin Olive Oil (EVOO) for frying BUY
- 2 Bunches broccolini
- 4 slices of cheese
- 2 diced roma tomatoes
- Handfuls basil leaves
- 1 Tablespoon Balsamic Glaze Recipe

Preheat oven to 180°C. Line 2 oven trays with baking paper.

Add a splash of EVOO to a hot pan. Season chicken breasts and fry quickly on both sides just to brown. Place on tray, cover with foil. Cook for 20 minutes.

Add broccolini to the tray and season with salt and pepper. Drizzle with EVOO. Roast for a further 20 minutes or until the chicken is cooked through.

Once the chicken is cooked, top with cheese and place back into the oven for 2 minutes, or until cheese has just started to melt.

Finish the chicken with tomatoes and basil. Drizzle with Balsamic Glaze to taste.

Serve Chicken Bruschetta with the roasted broccolini.
