Chorizo Corn Quesadillas
A delicious family dinner that is pretty casual and simple if you have the components ready to go. We love our Tex Mex! Do you?
This was always one of my go to dishes when the kids were busy (read, mum is too busy running the kids around to do a proper dinner) and it worked a treat as long as the components were ready to go. I confess I didn't used to make my own tortillas back in the day, ain't nobody got time for dat! Now I do.
They loved it, would often come and help on this one as there was lots of little tasks that I could set them onto, such as mashing avocados, grating cheeses or whatever. (This dates back pre-Thermomix days.)
Anyway, I know your mob will be happy with it. Hearty, tasty and very versatile. Add in the things you love, leave out anything you are not a fan of. Done.

Need
- 1 Handful fresh coriander or cilantro (cilantro)
- 1 Handful fresh oregano
- 100 Grams parmesan cheese cubed
- 80 Grams mature cheddar cheese cubed
- 140 Grams chorizo cured chopped in large pieces
- 1/2 red onion
- 2 - 3 cloves garlic
- A few spring onions or shallots
- 3-4 cherry tomatoes per quesadilla, halved
- 1 capsicum/bell pepper green or red diced
- 1 - 2 avocado
- 1 cob of corn, kernels cut off
- 100 Grams crumbled feta
- 8 - 10 Tortillas (I used 1/2 spinach and 1/2 sun dried tomato wraps) Recipe
- Extra Virgin Olive Oil (EVOO) as needed for frying BUY

Place coriander and oregano into Thermomix bowl and chop for 3-4 seconds on speed 7. Set aside.

Place cheeses into Thermomix bowl and grate for 10 seconds on speed 7. Set aside.

Place sausage, onion and garlic into Thermomix bowl and chop for 5 seconds on speed 6. Cook for 5 minutes at Varoma temperature on speed soft.

Prepare remaining toppings and set aside.

Lay out each wrap and top with grated cheese, sausage mixture, herbs, and a little of each of the other toppings finishing with the feta and a small amount of the grated cheese. Top with another wrap of choice.

Meanwhile heat a large fry pan on Induction 6 for around 6-7 minutes.The pan should not be smoking, but fully heated.

Drizzle with a little olive oil and place the quesadilla into the pan, cover and cook for around 2-3 minutes, turn over carefully and repeat.

Slice into quarters and serve with fresh lime wedges and additional coriander leaves. You could add a dish of sour cream and fresh sliced red chillies to serve if desired.
