I love my butter. You would know that by now I am pretty sure. So this was a no brainer. It was time. Thank goodness for doterra essential oils. It makes big flavours so easy with little effort. You can make your own butter, or not, just add it to bought butter if you want. But make sure you use a good butter, you want it to be worthwhile as you slather it on everything throughout the season. It would also make the perfect gift for the foodie in your life. YUM. Merry Christmas again kids...don’t say I never give you anything.

- 600 mls pure cream
- Iced water as needed
- Pinch Pink Salt Flakes BUY
- 2 Drop Cinnamon Bark Oil BUY
- 1 Drop doTERRA Oils clove BUY
- 2 Drop doTERRA Oils cardamom BUY
- 5 Drop doTERRA Oils tangerine BUY
- 1 tsp pure almond extract (optional)
- 20 g brandy
- 20 g icing sugar
- generous Pinch freshly grated nutmeg
Place cream into the Thermomix bowl and whip with Butterfly/speed 4 until the fats solidify and the liquid seperates. Time will vary depending on the freshness of your cream.
Remove Butterfly and press the simmering basket down on top of the butter without pushing too hard. Pour off the buttermilk and reserve for another use. (Keep refrigerated.)
Cover the butter with iced water and gently churn to wash the butter, hitting the reverse button a few times, on and off while you mix speed 4. Drain well and squeeze the butter until you have gotten out most of the liquid. Return the butter to the Thermomix bowl.
Add all remaining ingredients and mix 5 sec/speed 5.
Insert Butterfly again. Whip 20 sec/speed 4. You may find that because of the liquid from the brandy the butter is sort of slippery and a little wetter than usual. This is OK. Tip the butter out and roll and wrap in baking paper. Alternatively, press into small jars and garnish with a sprig of holly or other decoration of choice.
