Crunchy Grain Free Granola
This grain free granola is perfect for making and storing in the pantry for a convenient breakfast or snack.
That's right, quinoa is not a grain, rather it is a seed. A protein packed little seed at that. And given that I am not big on breakfast, and that it sounds way too healthy for the start to my day...I loved it! And it was totally gone within the day it was made. Of course it is easy to double up, triple up on this recipe, so go for it. You may be glad you did.
You can of course add as many dried fruits and nuts as you need to bulk it up. Or even add grains! What am I saying??? Whatever takes your dietary fancy...this can fit the bill.

Need
- 30 Grams coconut oil
- 60 Grams pure maple syrup
- 1 Teaspoon vanilla bean paste BUY
- 70 Grams uncooked quinoa
- 70 Grams almonds whole
- 70 Grams pepitas
- 70 Grams sunflower seeds
- 1 Teaspoon pink salt flakes BUY
- 70 Grams dried fruit of choice

Preheat oven to 160°C and line a baking tray with paper.

Place all ingredients, except fruit in order listed into Thermomix bowl and cook 3 min/37°C/Reverse/speed 1.

Spread out across prepared tray and bake 15 minutes. Turn oven off and leave tray in oven until completely cooled.

Break into pieces.

Mix with dried fruit. Store in an airtight container in your pantry.

Serve with cold milk, or as a sprinkle over yoghurt, Raspberry and Ricotta Whip, or with stewed fruit of choice.
