Elote Corn and Pasta Salad

A zesty Mexican-inspired salad with sweet corn, creamy dressing, and tender pasta, perfect for summer gatherings.

Bring the bold flavors of Mexican street food to your table with this Elote Corn and Pasta Salad. Sweet, smoky corn meets al dente pasta, tossed in a creamy, tangy dressing and finished with a sprinkle of cheese, fresh herbs, and a hint of chili. It’s a crowd-pleasing side dish that’s bright, flavorful, and easy to make for picnics, barbecues, or weeknight dinners. We absolutely loved this one and it has shown up more than once, which is unusual for us! Enjoy! 

Add any or all of the following to shake it up a notch:
spicy salami
cherry tomatoes
mixed pitted olives
pepperoncini
provolone cheese
parmesan cheese
crushed corn chips for some crunch

Premake the aioli in advance.

Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. Drain and rinse under cold water. Set aside in a large bowl to cool.

Add Lime and Jalapeno Aioli, stir to combine.

Meanwhile, to char corn, place peeled corn cobs onto an open flame (gas cooker or BBQ) and turn occasionally until well coloured. They will pop and make a lot of noise. Remove and cool before slicing the kernels off the cob. Add to pasta.

Add remaining ingredients and toss. Garnish with some of the coriander leaves, jalapeno slices and a lime cheek for good luck.
