Fruit Jellies
There is nothing more fascinating to a small child than a jewel coloured, bright wobbly jelly (jello). It is such a surprise when they find out that this weird shiny thing that shimmers and moves on touching, tastes wonderful.
NOW...the syrups...go for it. What syrup flavours can you come up with? Just imagine the possibilities. See some of our syrup suggestions for amazing homemade jellies below.
Then serve with ice cream, because, you know....jelly and ice cream! They're a childhood thing.

The Syrup
- 300 Grams frozen or fresh fruit of choice. (we've made this with strawberries, raspberries and blueberries)
- 150 Grams raw caster sugar BUY
- 70 Grams fresh lemon juice
- 1 Teaspoon vanilla bean paste BUY
- 200 Grams water

The Jelly
- 500 Grams of the syrup
- 12 Grams flavourless gelatin
- 50 Grams water, for blooming

To make the Fruit Syrup, place all ingredients into the Thermomix bowl and cook 8 min/100°C/speed 2.

Strain. Store in an airtight container in the fridge until ready to use.

To make the jelly, place 250g syrup into the Thermomix bowl and heat 8 min/80°C/speed 2.

Bloom the gelatin in the water. Add bloomed gelatin to the syrup and combine 20 sec/speed 6.

Add the remaining syrup to the Thermomix bowl and combine 6 sec/speed 4.

Pour into jelly moulds of choice and refrigerate until set.
