Fruit Jellies
There is nothing more fascinating to a small child than a jewel coloured, bright wobbly jelly (jello). It is such a surprise when they find out that this weird shiny thing that shimmers and moves on touching, tastes wonderful.

The Syrup
- 300 Grams frozen or fresh fruit of choice. (we've made this with strawberries, raspberries and blueberries)
- 150 Grams raw caster sugar BUY
- 70 Grams fresh lemon juice
- 1 Teaspoon vanilla bean paste BUY
- 200 Grams water

The Jelly
- 500 Grams of the syrup
- 12 Grams flavourless gelatin
- 50 Grams water, for blooming

To make the Fruit Syrup, place all ingredients into the Thermomix bowl and cook 8 min/100°C/speed 2.

Strain. Store in an airtight container in the fridge until ready to use.

To make the jelly, place 250g syrup into the Thermomix bowl and heat 8 min/80°C/speed 2.

Bloom the gelatin in the water. Add bloomed gelatin to the syrup and combine 20 sec/speed 6.

Add the remaining syrup to the Thermomix bowl and combine 6 sec/speed 4.

Pour into jelly moulds of choice and refrigerate until set.
