I know I have written up another version of this, but I want you to seize the possibilities. Think any fruit in this recipe. They will ALL be delicious. I made it with passionfruit recently. SO yum, peaches, any stone fruit really, all berries will be wonderful. Then we are using this as a base ingredient for so many other options. Be ready...but in the meantime, think ice cream topping, homemade jellies, Flummery flavouring, through whipped cream on a dessert. Seriously. YUM and so simple.

- 300 Grams blueberries
- 150 Grams sugar
- 80 Grams fresh lemon juice (approx 1 lemon)
- 1 Teaspoon vanilla bean paste BUY
- 200 Grams water

Place all ingredients into Thermomix bowl and cook 8 min/100°C/speed 2.

Press through a fine strainer to remove solids.

Store in sterilised airtight jar in fridge until use.
