Khai Jiao - Thai Omelette

Do you miss eating out on overseas trips? I do. This is a little brekky that I didn't know had a name until I did some research that you can have all over Thailand and Phuket. I have to say, if you are not an omelette person, this may convert you. It is so good. I love the bright colours, and although traditionally a breakfast, I think it makes the perfect lunch and/or light dinner. It is easy to make more but don't attempt cooking more than this much at once as you won't get it flipped without serious kitchen collateral!

Place rice into simmering basket and pour enough water over so you can see it when you tip the bowl on an angle.

Steam rice 14 min/100°C/speed 3. Remove rice and keep warm. Drain water from the bowl and allow to cool slightly.

While the rice is steaming, slice the chilli, add it to a bowl with vinegar, sugar and half the fish sauce and give it a good stir. Set aside.

Heat a lot of EVOO in a cast iron skillet or other frying pan over a medium high heat until it is shimmering and almost at smoke point. It needs to be very hot.

Place the eggs and remaining fish sauce into the Thermomix bowl and blend 20 sec/speed 10. Add half of the snipped chives and stir through.

Pour the egg mixture into the smoking hot oil and let it cook undisturbed until golden brown underneath. Watch the heat carefully as you don't want to burn it. Carefully turn the whole thing over with a spatula or tongs and cook on the other side until just set. Flip and fold into the omelette shape.

Serve with the chilli sauce, sliced onions, the rest of the chives, Chilli Jam and herbs of your choice.
