You can make the Dulce de Leche well in advance of needing it. Place milk, sugar, vanilla bean paste and cinnamon into Thermomix bowl and cook 8 min/90ºC/speed 5.

Add maple syrup. Cook 40 min/Varoma/speed 5/spatter guard. If you don't have a spatter guard, use the simmering basket or Varoma on top of lid to allow reduction with minimal mess.

Add salt and blend 30 sec/speed 6.

Pour into a hot sterilised jar, cool and store in the fridge until use.

You may need to warm it up to spread it if required. Eating it from the jar with a spoon is completely acceptable.

To sterilise bottles or jars;

Give your jars and lids a hot soapy wash and a good rinse or put them through the dishwasher.

Put jars upright onto a baking tray, place tray into a the oven at 110°C for about 15 minutes or until jars are completely dry.

To sterilise the lids, the best practice is to boil them for 5 minutes and place them on a cooling rack to air-dry.
