- 1 Tablespoon cumin seeds
- 1 Tablespoon ground ginger
- ½ cinnamon stick(s)
- 2 Teaspoons pink salt flakes BUY
- 1 Teaspoon coriander seeds
- 1 Teaspoon cayenne pepper
- 1 Teaspoon black peppercorns
- 1 Teaspoon ground allspice
- 1 Teaspoon sumac
- 3–4 cloves

Place all ingredients into a dry frying pan on a high heat. Toast until just smoking. Remove from heat and cool.

Place into the Thermomix bowl and mill 10 sec/speed 8. Wait to open the lid until the dust subsides a little as it will be very fine and you will react!

Store in an airtight container in your pantry.
