Mushroom Croque Monsieur

A rich and melty French café classic. This mushroom-stuffed Croque Monsieur gets golden and gooey with help from your Thermomix and airfryer.

Officially, a croque monsieur is a hot sandwich made with ham and cheese. The dish originated in French cafés and bars as a quick snack, sometimes with the addition of bechamel. This is my version, if you were vegetarian, you could skip the ham and pile up the mushrooms and of course, the mornay sauce just takes it over the edge to heavenly. If you added a fried egg on top you are going all feminine and it becomes a Croque Madame! 

This isn't your average toasted sandwich. The Croque Monsieur is France’s answer to the ultimate comfort food. The Thermomix makes easy work of the béchamel, (or Mornay) while the airfryer crisps everything up to golden perfection. It's a perfect brunch, lunch, or light dinner that feels indulgent and oh-so-French.

Premake the Mornay Sauce well in advance. It needs to be almost cool before assembling your sandwich.

Place cheeses into the Thermomix bowl and mill 10 sec/speed 10. Remove from bowl and set aside.

Place garlic, shallot and butter into the Thermomix bowl and chop 3 sec/speed 5. Sauté 7 min/Varoma/speed 1.

Add milk, sherry, egg, flour, mustard, chilli sauce and seasoning. Cook 8 min/80°C/speed 4.

Add three quarters of the cheese back into the bowl and blend 15 sec/speed 7. You will use the rest in your sandwiches.

Cool the sauce.

Preheat the air fryer for 5 min/200°C.

Prepare the Croque Monsieur by generously buttering one side of both pieces of bread. Turn buttered side down on a board. Spread plenty of Mornay Sauce on one slice of bread and top with some of the grated cheese. Add ham, mushrooms and sliced cheese in that order. Top with the other slice, buttered side up. Spread more Mornay Sauce on top and finish with a little more of the grated cheese.

Cook for 10 min/200°C. Serve immediately, but don’t burn the roof of your mouth on that hot cheese.

Note; Keep any Mornay sauce leftovers in an airtight container in the fridge for future sandwiches or toss through pasta with some tuna or seafood for a delicious dinner!
