I whipped this up one year for a cheese board, posted it on Facebook and then didn’t write it down of course. Years later after being hounded for the recipe on said social media by people unnamed but whose initials are Helena Chinnock, I finally tried it again. Super simple and a big hit with anyone who tries it. It works perfectly well in place of quince or guava paste, quicker to make and the ingredients are available all year round! It’s not pretty, but I doubt you’ll notice that at all.

Need
- 250 Grams dried figs
- 120 Grams Sherry Pedro Ximemez to be precise
- 1 Pinch pink salt flakes BUY
Do

Soak the figs in half of the Pedro for a minimum of 1 hour.

Place into the Thermomix bowl and chop 8 sec/speed 6.
- 3
Cook 5 min/100°C/speed 2.
- 4
Add remaining Pedro and stir to combine.

Push into a bowl of jar that you can serve directly from and refrigerate.

Serve with cheese board and crackers/breads of choice.
