Pedro Ximenez Fig Paste

Makes 200g Prep Time 5 minutes   Cook Time 5 minutes   Rated:

I whipped this up one year for a cheese board, posted it on Facebook and then didn’t write it down of course. Years later after being hounded for the recipe on said social media by people unnamed but whose initials are Helena Chinnock, I finally tried it again. Super simple and a big hit with anyone who tries it. It works perfectly well in place of quince or guava paste, quicker to make and the ingredients are available all year round! It’s not pretty, but I doubt you’ll notice that at all.

It does appear in The Weekend Table. That means it is a favourite and always will be. The book of favourite recipes. Go get your copy now while stocks last!
