What is better than a little bite of a meltingly good chocolate truffle? Well that would be a (bigger) bite of a meltingly good chai infused truffle. These gems were created for our friends at Prana Chai who have kindly allowed us to republish the recipe here for you! It is time to chai harder kids...put these on your gourmet gifting list! Truffles
- 300 Grams chocolate dark (if using white chocolate, increase to 400gm) BUY
- 180 Grams cream BUY
- 60 Grams Prana Chai mix BUY

Toppings
- cocoa, sprinkles, crushed nuts, chai, crushed biscuits, gold leaf etc

Place chocolate into Thermomix bowl. Mill 7 sec/speed 8. Set aside in a mixing bowl.

Place cream and chai into Thermomix bowl. Heat 4 min/90°C/reverse/speed soft. Let sit for 20 minutes. Strain and discard the solids.

Heat cream again 4 min/90°C/speed 1. Pour cream over chocolate. Stir and let sit for a few minutes. Whisk until it comes together and makes a glossy ganache. Refrigerate for 2-3 hours, or until set (rollable).

Roll into truffles and coat with toppings of choice. Store in the fridge.
