It not only is an amazing rich hot drink, it protein and antioxidant rich, with health benefits up your wazoo...and then some. It also doubles as a protein chocolate mousse if you leave it in the fridge overnight. Creamy and amazing. All with nut mylk cream...that you made yourself.

Cashew Milk
- 220 Grams cashews raw
- 6 Cups water, divided
- 1 Tablespoon pure maple syrup
- 1 Pinch pink salt flakes BUY
- 1 Teaspoon vanilla bean paste BUY

The Hot Chocolate
- 360 Grams cashew milk, divided
- 60 Grams chocolate dark BUY
- 30 Grams cocoa powder BUY
- 90 Grams Peanut Butter Recipe
- 1 Tablespoon pure maple syrup
- 1 Pinch pink salt flakes BUY
- 400 Grams Brew Choc brewed BUY

To make the cashew milk, place cashews and 2 cups of water in a bowl. Soak, covered for at least 4 hours. Strain, rinse and discard water.

Place cashews into the Thermomix bowl with 2 cups of water. 2 min/speed 10. Add another 2 cups of water and all remaining ingredients. 2 min/speed 10. Set aside.

To make the hot chocolate, place 120g of the cashew milk, chocolate, cocoa powder, peanut butter, maple syrup and salt into the Thermomix bowl and cook 3 min/50°C/speed 3.

Add 240g of the cashew milk and warm 3 min/80°C/speed 4. Blend 1 min/speed 10.

Pour Brew Choc into a mug, half way and top up with the hot chocolate. Drizzle with a little cashew milk for effect.

This actually becomes quite solid and mousse like once cold and refrigerated. So....should you love a good healthy protein chocolate mousse, this may be your new fave!
