Roasted Vanilla Plum Granita
A totally refreshing and beautifully coloured chilled granita or even sorbet if you wanted to whip it up to break down the ice crystals YUM either way
I love using heat or flames to add flavour. No flames here, but heat in that the plums are roasted first to enhance the natural sweetness without adding extras apart from the obvious sugar and vanilla. And how about that colour? That too is partly because of the roasting.
This is the perfect palate cleanser between courses if you are hosting a fancy schmancy dinner party. Of course it does equal distance as the perfect cool treat by the pool with the kids. Your call. Double duty! Gotta love that.

Need
- 1 Kilo black or red plums
- 1 vanilla bean BUY
- 150 Grams coconut sugar
- Zest and juice 1 lime
- 1/2 Teaspoon ground cinnamon

Preheat oven to 180°C.

Split plums in half and remove pits.

Place into baking dish with vanilla bean, and sprinkle with the sugar.

Roast 30 minutes until well softened and juicy.

Cool.

Place roasted plums and all remaining ingredients into Thermomix bowl and blend 10 sec/speed 10.

Spread onto a lined tray and freeze for several hours until very solid.

Chop into pieces and place into Thermomix bowl. Blend 10 sec/speed 10.

Serve immediately as a palate cleanse or as a light dessert.
