Salmon with Fermented Chilli Honey

This steamed salmon is proof that healthy doesn’t have to mean boring. Gently cooked to stay silky and tender, the salmon is both marinated and finished with a drizzle of fermented chilli honey that brings warmth, sweetness and a subtle tang that your gut will thank you for. - 500 Grams skinless salmon (2-4 large pieces)

The Chilli Honey Marinade
- 3 coriander roots
- 2 cloves garlic
- 10 Grams fresh ginger
- 50 Grams Fermented Chilli Honey Recipe
- 40 Grams soy sauce
- 10 Grams fish sauce
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 40 Grams fresh lemon juice
- black pepper to taste

The Salad
- 2 spring onions, julienned
- 1 carrot, julienned
- 1 yellow capsicum, julienned
- wedge of purple cabbage, shredded
- Bunches fresh coriander or cilantro leaves
- 2 makrut (kaffir) lime leaves thinly sliced
- 1 red chilli thinly sliced

The Garnish
- 1 Teaspoon black and white sesame seeds

Place salmon into a container.

Place all marinade ingredients into the Thermomix bowl. Combine 10 sec/speed 10. Pour half over the salmon and refrigerate for at least 2 hours.

The remaining marinade can be kept in the fridge for future cooking. Or used as a salad dressing.

Fill the Thermomix bowl to the 1 litre mark with water. Place salmon into the Varoma tray and set in place. Steam 15 min/Varoma/speed 2.

Meanwhile toss all salad ingredients together.

Serve salmon garnished with sesame seeds and a side of the salad.
