Savoury Beef Flatbread
We love a good flat bread dinner. They are so easy and filling. This is the ultimate quickie if you buy a pack of the Middle Eastern round flat breads, (freeze the other one as they usually come in twos.) You can make your own of course. Then top with as much salad as you can bring together from the veggie drawer in the fridge, but don't leave out the mint and parsley as they just make it in my opinion. A little yoghurt drizzle would also be great. Super cheap. Super quick. Better than takeaway and definitely more economical. Twenty under Twenty! (coming soon to the Insider Club!)

- 1 large round flat bread (from Middle Eastern bakeries)
- OR 1 Batches Cumin Flatbread baked into large rounds Recipe

The Beef
- 500 Grams minced beef
- 2 Teaspoons ground cumin
- 2 Teaspoons garlic powder
- 1 Pinch pink salt flakes BUY
- 2 Tablespoons Extra Virgin Olive Oil (EVOO) BUY

The Salad
- 1/4 cabbage, thinly sliced
- 1 carrot, grated
- 1 tomato, diced
- 1 avocado peeled and diced
- 1 spring onion, sliced
- 1 capsicum/bell pepper red, sliced
- 1 Handful flat leaf parsley leaves
- 1 Handful fresh mint leaves
- 30 Grams fresh lemon juice
- 2 Tablespoons Extra Virgin Olive Oil (EVOO) BUY
- 1 Pinch pink salt flakes BUY
- black pepper freshly ground to taste

To cook the mince, combine all ingredients in a bowl with a fork then place into the Air Fryer.

Cook for 10 min/200°C, stirring halfway through.

Combine all salad ingredients in a large bowl and drizzle with EVOO, lemon juice and season with salt and pepper. Give it a good toss.

Place warm flat bread onto a large board. Top with mince, then top with salad. Serve like a pizza with extra lemon wedges on the side.
