- 1 Batch Puff Pastry Recipe
- 80 Grams parmesan cheese cubed
- 3 cloves garlic
- 1 eggs
- 1/4 Teaspoon fresh nutmeg grated
- pink salt flakes and pepper to taste BUY
- 120 Grams baby spinach leaves
- 500 Grams Fresh Ricotta Cheese Recipe
- 1 eggs whisked, for egg wash
- 1 Tablespoon black and white sesame seeds

Preheat oven to 210C. Line a large oven tray with baking paper.

Place parmesan and garlic into the Thermomix bowl. Mill 10 sec/speed 10.

Add egg, nutmeg, salt and pepper. Mix 6 sec/speed 6.

Add spinach and ricotta and fold through with spatula.

Divide pastry into 3 rectangles. Spread filling equally between the 3. Leaving a clear border with no filling.

Roll up and tuck edges in. Place on tray. Brush with egg wash and sprinkle with sesame seeds.

Bake for 25 minutes. They tend to split as baking, but we quite like the look of this, so go with it! Rustic!
