Spring Pea Smash with Ricotta on Toast

Pretty much the eight minute breakfast that will have you reaching for another piece. Super simple. Made to order, add poached egg or not. This beats avo smash any day! (And a bit cheaper too I believe!)

Need
- 3 cloves garlic
- 20 Grams butter BUY
- 200 Grams frozen peas (not baby peas preferably)
- 1 lime, juice only
- 3-4 fresh mint sprigs
- 150 Grams Fresh Ricotta Cheese Recipe
- pink salt flakes to taste BUY
- black pepper to taste
- a few Heirloom cherry tomatoes sliced or quartered
- 4-6 slices of good bread, toasted

Place garlic and butter into the Thermomix bowl and chop 4 sec/speed 5. Saute 5 min/Varoma/speed 1/MC OFF.

Add peas, lime juice and a couple of the mint leaves. Cook 3 min/Varoma/speed 1/MC OFF. Blend 10 sec/speed 7.

Meanwhile prepare everything else that you will need to assemble.

Mix some seasoning through the ricotta cheese and spread generously across the toast. Top with the pea smash and garnish with tomatoes and a mint leaf or two. Season with a little extra salt. Serve immediately.
