Strawberry Almond Milk

Completely delicious, dairy free and a bit of a healthy treat, good enough to serve for breakfast, lunch or after school. One should not drink too much almond milk apparently, so don’t make it too often...this is seriously good stuff and I find it hard to resist. So it still needs to be a bit of once in a while treat. (Just saying!)

Need
- 150 Grams almonds
- 2 cups filtered water
- Coconut water to make up to 1litre
- 45 Grams maple syrup
- 1/2 Teaspoon pink salt flakes BUY
- 250 Grams strawberries, hulled and frozen
- 1 Teaspoon vanilla bean paste BUY
Do

Place nuts into a bowl and cover with 2 cups water and soak several hours or overnight. Drain nuts and place into Thermomix bowl.

Add enough coconut water to reach the 1L line inside the bowl. Blend 2 min/speed 8.

Strain through nut milk bag and return milk to the Thermomix bowl. Reserve nut pulp for another recipe.

Add remaining ingredients to Thermomix bowl and blend 20–30 sec/speed 10 Check that the strawberries are well blended and repeat if necessary.

Chill milk before serving.
