Strawberry Limeade

We are heading south to run some cooking events in the lovely Pemberton region. Pretty exciting.

We have been invited to use as much local produce as possible which I totally love. It makes creating that much more fun when you are given a list of potential ingredients. Strawberries were on that list for this time of year. (The class is in November.)

So on arrival, we will be serving this pretty thing. It is delish, not too sweet and it can last the distance a couple of days in the fridge. (And you CAN add alcohol...in this case prosecco is recommended. You're welcome!)

Need

  • 80 Grams raw caster sugar BUY
  • 4 limes
  • 250 Grams fresh strawberries, hulled (about 200g in weight)
  • 500 Grams filtered water plus more sparkling mineral water to taste
  • Prosecco to taste (optional)

Place sugar and finely grated lime zest into Thermomix bowl and mill 20 sec/speed 10.

Add quartered limes and strawberries and a little of the water. Chop 3 sec/speed 7. Add some of the water through hole in lid and just combine. Allow to steep for about 5 minutes.

Strain out solids and return mixture to the bowl. Add remaining water and combine gently 3 sec/speed 3

Dilute to taste with sparkling water or prosecco. Serve with ice and sliced strawberries to garnish.
