The English Reuben Sandwich

One of my all time faves from back in the day. I do love the dark rye version, but this English Muffin version is pretty good!

The Reuben sandwich is a popular American deli sandwich that traditionally consists of corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing between slices of grilled rye bread. The origin of the Reuben sandwich has several disputed stories, and its exact beginnings are not entirely clear.

We are really mixing it all up here with our origins and flavours! With apologies to the OG Reuben and all who love a good dark rye bread Reuben sandwich, this is still pretty good. There is no corned beef, though you could totally go with that option, we opted for loads of shaved pastrami instead, which my sources tell me is acceptable. (No complaints from the eaters on the day of testing and filming!)

We are not sure who Reuben was, but he had great taste and today we appreciate him still!

These are ideally made when you already have some English Muffins ready and waiting in the freezer.

Premake the muffins. Split them in half. Butter and toast them in a hot frying pan until golden and fragrant.

Spread the bottom muffin with Thousand Island Dressing.

Top that with plenty of shaved pastrami, then the cheese. Finish with the sauerkraut and top all that with the other half of the muffin. Skewer the entire thing with a pickle and a bamboo pick if you have any handy. They do help you eat this amazing thing as well, with less spillage.

You could serve with extra pickles on the side. Or just load up those muffins. At your own risk!
