Whey Rosella Tea Soda

My kitchen has become a science lab. I have fermenting drinks at varying stages all over the place. We are washing out jars and bottles like there is no tomorrow and the whey is diminishing slowly but surely. We have so much whey after creating our multitude of cheeses for both testing and filming of course. Make sure you go and watch those videos to get inspired to make your own cheeses. It is a LOAD of fun...by product is a LOAD of whey. So this one is to help you use up a decent amount.

Rosella tea is pretty but you really can do this with any tea of your choice. We think sticky Prana Chai would be incredible and it may be on the list to give it a whirl, when I can see bench space!

You can certainly use honey or maple syrup in the place of the sugar on this one, half the quantity as listed. It will have a different end result and be absolutely delicious. The other thing to remember is that the fermenting process will use up a lot of the sugars in the drink, so don't skimp as you will find it sour and pretty unpalatable if you do.

We tried orange and ginger, using a tea made of fresh ginger and honey, with some orange juice and ginger oil added.

Currently have cherry soda on the go, using a sour cherry syrup that was concocted from frozen sour cherries, sugar and water, then strained before the fermenting process.

Of course lemon...so good.

Place water and tea into the Thermomix bowl and cook 10 min/90°C/reverse/speed 2 Leave in the Thermomix bowl for 10 minutes to make sure it is nice and strong.

Strain out solids and add sugar while tea is still hot. Stir until the sugar has dissolved. You can use honey or maple syrup here, but only use half the amount as sugar.

Cool to room temperature. Add whey and stir to combine. Transfer to a sterlised jar and seal. Leave at room temperature for 2-3 days or until you see bubbles starting to form. Be careful not to over fill the jars, as when the fizz happens, it really does happen!

Refrigerate and then serve over ice with fresh citrus juice if desired.
