Well this was bound to happen...avocado. Ice-cream. Vanilla. Mint. Blending. The end.
I love this green smoothie...every day should start with this...and with the advent of Killer Vanilla Ice-Cream (in the new book, which you can go and get HERE) which is THE best vanilla ice cream recipe known to the Thermomix world, you can be making these on a regular basis with zero guilt and just a little bit of pride. Dee-lish.
I must say when slightly frozen after the fact, (which does happen when shooting photos or videos, if we cannot eat it all in one go!) it is even better. A sort of avocado minty thickshake...go on. You know you want to. Perfect for summer, and luckily for us in Australia, pretty good any time of year.

- 400 g Very Hey La La Vanilla bean ice cream or other vanilla ice cream of choice Very Hey La La Vanilla Ice Cream
- 1 Hass Avocado, flesh only
- Handful spearmint leaves
- 1-2 Drop doTERRA - Peppermint Oil doTERRA peppermint oil (optional) BUY
- 1 tsp Vanilla - Bean Paste vanilla bean paste BUY
Place all ingredients into Thermomix bowl and blend 10 sec/speed 8.
