Cacao Nib ButterMake on Fresco
OK, you would know that I am a big fan of butter...I believe it is a soothing health food and should be consumed every day to prevent illness. So imagine adding that other fave health food, real chocolate to butter, just a snippet of sugar which could totally be left out and of course vanilla bean paste. Put that on your Banana bread and see who's happy. Everyone, that's who. This will keep for literally months in the freezer to be produced at a moment's notice for those occasions when you need to impress without stress. You're welcome my lovelies. (Enjoy!)

- 50 Grams cacao nibs roasted BUY
- 20 Grams icing sugar
- 1 Teaspoon vanilla bean paste BUY
- Pinches pink salt flakes BUY
- 150 Grams unsalted butter diced BUY
Place all ingredients into Thermomix bowl and blend 10 sec/speed 6.
Roll into a sausage shape and wrap in baking paper. Keep refrigerated until use
To roast cacao nibs, place them on a lined baking tray into an oven set to 160°C and roast until fragrant. This can be up to an hour, depending on how many you are roasting at a time. Delicious!
