I think this is one of the Christmix projects I have managed to churn out over the years...not sure which to be honest, but none the less, completely delicious and easy. You will definitely be wanting to add this to your menu for any party occasion. It is a crowd pleaser. If I say so myself. And as for the crackers...well...there are so many options on this site, you really should venture into cracker production for yourself. Totally different to the bought variety. And kind of fun. In an OCD sort of way. Enjoy.

Place butter, chipotle chilli, onions and salt into Thermomix bowl and chop 4 sec/ speed 4.

Sauté 15 min/Varoma/Reverse/speed 1.

Continue cooking 15 min/100°C/speed 1.

Cool onion mixture completely before proceeding.

5  

Add cream cheese and sour cream to the onion mix and blend 4 sec/ speed 5.

6  

Serve sprinkled with crispy fried shallots and plenty of dippers, like veggies or chips to go with it.
