Citrus Turmeric Sorbet Pops
This recipe comes from one of my favourite chefs, James Ephraim, who is executive chef at the Mozaic restaurants and star of the Thermomix Master Classes held every year as part of the Bali Foodie Feast Tours I host. I am in total awe of his creativity and skills. James serves this recipe with roasted apricots, in elegant quenelles. This is my Thermomix-ed version, in pops!

Need
- 50 Grams fresh turmeric peeled
- 200 Grams raw caster sugar BUY
- 300 Grams water
- 300 Grams milk
- 100 Grams honey
- 1 Tablespoon cornflour or cornstarch
- 110 Grams fresh lemon juice
- 110 Grams lime juice, fresh

Place turmeric into the Thermomix bowl and chop 3 sec/speed 6.

Add sugar and water and cook 20 min/100°C/speed 1.

Allow to cool completely in the bowl, remove and strain very well. Return strained liquid to the Thermomix bowl.

Add remaining ingredients and blend 30 sec/speed 8.

Pour into metal tray and freeze.

Break into pieces and place into the Thermomix bowl. Blend 30 sec/speed 8 with the aid of the spatula until smooth.

Divide between popsicle moulds and freeze.
