Curry Mayonnaise
When you're sandwich needs a bit more punch, Curry Mayonnaise to the rescue. Super simple to make, YUM!
Apparently there is a store in NYC that opened selling only mayonnaise. While I think that is a little too exclusive, I understand the passion about mayonnaise. The things you can add to mayo to take it above and beyond this world are wide and varied, so get ready for the new taste sensations that are specified here. Your mission, if you choose to accept it, is to never more fail at mayonnaise, and to forever more add flavour above and beyond the call of duty.
Fantastic with chicken or egg salad, on sandwiches, pita bread etc. Also great with seafood or potato salad.

- 1 whole egg
- 15 Grams white wine vinegar
- 1 Teaspoon Yellow Mustard Recipe
- 30 Grams Yellow Curry Paste Recipe
- 1 Pinch pink salt flakes BUY
- 400 Grams flavourless oil
- 2 limes Juice only

Place egg yolks, vinegar, mustard, curry paste and salt into Thermomix bowl and mix 1 min/37°C/speed 5.

Gradually add oil through hole in lid with MC in place, 4 min/speed 5.

Add lime juice and blend 10 sec/speed 5. Scrape into sterilised jar and keep in fridge up to 3 weeks.
