I love how quickly you can throw a marinade or dressing together in the Thermomix. Even better if the herbs come fresh from your own garden. I don't normally tend to measure the herbs. Use what you have and rely on your own good judgement for how this will taste. It has to to taste amazing if you are making it right?
You can add some whey to this recipe, this will help tenderise the lamb, you can use it on chops, cutlets or an entire leg of lamb, or for that matter beef or chicken.
Try it as a salad dressing as well...it is delicious.

Need
- 1 spring onion, quartered
- 1 Handful flat leaf parsley
- 3 fresh oregano leaves only (or 1 tsp dry)
- 1 fresh rosemary sprig, leaves only
- 1 small Handful fresh mint
- 4 cloves garlic
- 100 Grams Extra Virgin Olive Oil (EVOO) BUY
- Zest 1 lemon, finely grated
- Flesh 1 lemon (seeds removed)
- 1 Teaspoon pink salt flakes or to taste BUY
- black pepper freshly ground to taste
- 2 Tablespoons whey (optional) Recipe
- Lemon wedges to serve

Add all ingredients to Thermomix bowl.

Blend 10 sec/speed6. Scrape down lid and sides of bowl.

Blend 10 sec/speed 7. Scrape down lid and sides of bowl.

Blend 10 sec/speed 8. Add marinade to lamb, coat well and leave in refrigerator for at least one hour.

Cook lamb on BBQ, under grill or in oven until cooked to your preference.
