When you feel like pie, but don't have any handy, or the time to whip one up! This lemon meringue pie smoothie has no wispy egg white meringue on top, but blend it well to get the frothy lemony feel that you love with less guilt and certainly less calories.
This was a firm favourite in any cooking classes I ever made it for. Make it your favourite too.

- 2 lemons, zest finely grated
- 70 Grams raw caster sugar BUY
- 300 Grams fresh lemon juice no subsitutes allowed!
- 300 Grams coconut milk Recipe
- 100 Grams ice cubes
- 2 Teaspoons vanilla bean paste BUY
Do

Place zest and sugar into the Thermomix bowl and mill 10 sec/speed 10.

Add remaining ingredients and blend 1 min/speed 10. Serve immediately.

In the video you will notice we used a cream charger to dispense the smoothie...it was pretty fun and added a great frothy texture. Give it a whirl.
