When in Europe during the winter, this is the fragrance you can literally smell everywhere you go. I absolutely love the Winter Markets of Europe. The air is icy, often with snow crunching underfoot, and the sky darkens by mid-afternoon. Yet somehow, the streets are alive—people wrapped in scarves and beanies, warming their hands on steaming cups, gathering under twinkling lights to eat, shop, and celebrate the season.

At the heart of all this cheer is Glühwein—the spiced mulled wine that truly defines a European winter. It’s the unmistakable scent of cinnamon, cloves, citrus, and red wine wafting through the crisp air, drawing you in like a warm hug. While hot chocolate and strong coffee have their place, Glühwein is the drink of choice—comforting, aromatic, and deeply nostalgic.

Place sugar, water, ground cinnamon, brandy, zest and juice into Thermomix bowl and cook 8 min/100°C/speed 1.

Transfer syrup to slow cooker. Add remaining ingredients. Cook on high temp setting for an hour. The flavour will improve over several hours, and this will also make your house smell amazing.

Strain before serving hot, with a few of the raisins and almonds in the cup, but leave the remaining solids in the slow cooker to keep infusing.

To make a non alcoholic version, cook the wine at a higher heat, (to the boil in fact) or replace the wine with non alcoholic wine, and omit the brandy.
